Cocktails

No party is complete without the right libations. I understand that some people prefer not to drink and I applaud that move. Similar to how I applaud vegans and meat eaters who don’t eat bacon. But have you seen that Tumblr “when someone invites me to a party amd there is no alcohol.” Yeah, don’t be that host. Options are always good.

Golden Passion

1.5 ounces vodka

1 ounce passion fruit

Splash of orange juice

A bit of lemon rind

Shake vodka and juices over ice and pour into chilled cocktail glass, Garnish with lemon rind.

Bubbles

You know the pop made when you open sparkling wine?…I call it the happiest sound in the world. Nobody is ever sorry to hear that sound. Here are a few very afforable options for bubbles. Both options under $12!

Freixenet Cordon Negro Extra Dry

This is light and fruity and even newbies to bubbly will enjoy this.

Presto Prosecco Brut

A little dryer than the Freixenet but equally yummy.

Wine

I am a red wine fanatic! However, I do understand that not everyone feels the way I do. I generally try to poll guests to find out their taste but in a pinch I go with a riesling because even none wine drinkers will like the a light, sweet to semi sweet and fruity nature of some rieslings.

Smal Bites

You could do chips and dip (booooring!) and or you could kick it up a notch with these quick and easy turnovers. So simple, yet so tasty and gourmet-looking!

Mushroom Turnover with Truffle Oil

2 cups minced baby bella or cimini mushrooms (If you have a variety of mushrooms it is even better!)

1 clove garlic, mince

3 tablespoons minced vidalia onions

1 cup fresh arugula

1/4 freshly grated parmesan

Pinch of red pepper flakes (optional)

2 tablespoons vegetable oil

1 can Pillsbury cresent roll

2 tablespoons truffle oil

1 table spoon of flour

In a meadium skillet heat vegetable oil and saute onions until translucent. Add garlic and stir for a few seconds. Add mushrooms and sautee for about a minute. Add salt, red pepper flakes and arugula and immediately remove from heat. Set aside to cool completely. Drain all the liquid from the sauteed ingredients (I use this liquid for a risotto but that’s for another time). Add parmesean and truffle oil and set aside. Open crecent roll and seperate the individual pieces of dough along the perforations. Dust hands with flour and quickly flatten the dough just a bit. Spoon mushroom mixture on one side of the dough and fold in half. Pinch edge with fork and transfer to an ungresed cookie sheet. Bake at 350 until golden. Serve immediately.
